Mexican Fajita Recipe

1 pound Skirt Steak sliced in 1/4 inch strips

1 small bottle of Seven Seas Italian Dressing

1 Large Bell Pepper, slice in 1/4 inch strips

1 Large yellow onion, slice in 1/4 inch strips

8 soft tortillas

1 cup Salsa, check my recipe for salsa

1/2 cup sour cream

4 ounces of shredded cheddar cheese

Marinate, by placing the Skirt Steak in large glass dish, shake and pour the Seven Seas Italian Dressing over the steak and cover. Refrigerate overnight, but if you only have a few hours, it will work fine. Cook the marinated skirt steak on the grill, until your preferred doneness. Saute the Onion and Bell Pepper for about 10 minutes in Grapeseed oil on medium heat. Heat the tortillas in the microwave for 30 seconds. In each tortilla add the skirt steak, onion and bell pepper, top with salsa , shredded cheeese and sour cream. If you can't find Skirt Steak from your local store, Sirloin works well, but if you really want Mexican, ask your butcher for Skirt Steak.
